Do you think Pearl views Steven as hers and Rose's son?

Why or why not?

Pearl loves Steven and she loves Rose. She is the most mothering figure to Steven out of all the gems.

Personally i think she does!
As mentioned before she's the most motherly and protective of steven. Even referring to him as her 'baby' in say uncle (which is cannon upon interpretation).
In 'Chille Tid'we can see Rose is clearly pregnant with Steven in her dream. And we know this is to be steven because pearl even mentions Greg. Pearl many times has wanted to teach steven and take him to space. We Also see her comfort him after his last dream and was even willing to tell her dream to help him get to sleep.
It's true she does occasionally call him Rose or compare him to Rose but that's just something (at least in my experience) Parents do. My mother often comments on how much i look and act like my dad. Steven shares many things in common with his mom, slight appearance, powers, even her laugh and eyes.
Pearl loved Rose, and it'd be easy to see once Rose left Pearl being left with this baby. And her seeing Rose, yet another person, in the Steven.
She does odd things to show she cares for steven, some of them only she does, and some another/all the gems do like:
Watching Steven sleep (i really want to know why)
Being first to catch him most the time
Trying to get along with Greg
Answering almost all stevens questions
She also tries to encourage steven in what ever he does such as playing instruments or More notably going to his play.

Speaking of the play Pearl acted like the stereo type mom to steven in that episodes, saying things like 'when did you get so smart' and attending his play, she originally sat in the front row but moved, and then getting over excited to see the child she helped raised on stage. Even after the play she went backstage and likely congratulated him and told him how great she think he did.

In a lot of the episodes she either humors him or holds him. he's her baby.
Most people would argue that she didn't help make him but You don't have to biologically help make a child to be a parent. All you need is love and encouragement for the child and help them grow into a better person.

I would agree that Pearl definitely see's Steven as her baby. Like that's pretty obvious xD But I wouldn't say she thinks that Steven actually came from her and Rose. Like, I can see her WANTING that really bad but I think it's more a want of having her, Rose, and Steven all together. Like that's the ideal dream to her. But I think she realizes that Steven is part Greg which is why Pearl interacts with him better now than she did before. She realizes that while she can mother Steven all she wants, he's not really hers and is Greg and Rose's.

But then like Hessonite said, she still acts VERY motherly towards him, moreso than the other gems. Like the other gems watch out for him and stuff but Amythest is more like a sister, Garnet is mainly just the leader, and then Pearl is the one who showers him with motherly love, whether she realizes it or not.

I personally think this is one of the reasons why Steven doesn't miss Rose as much as everyone else. The main reason being he didn't know her like the Gems and Greg did, but I think it also has to do with the constant love he receives from Greg and his surrogate mother Gems. Like, no matter what situation he's in, he is constantly being loved by someone. And with Pearl providing the majority of the "mother" type love, I think because of all this Steven doesn't miss Rose as much because his need for that love is fulfilled by the wonderful people around him.

i think this is in part due to her personality, you know. as a pearl, it's been discussed that they are perhaps a more subservient class of gem. in my personal headcanon, and i know Rose Quartz and i have discussed this, that peridot is an upgraded version of pearl. so pearl would have been a tactician, an engineer of sorts. she builds a space ship, she holograms ideas and plans and enjoys being organized and orderly.

but then, she's a great swords-woman. she's crafty and skilled and has skills outside the purported/theorized realm of a pearl's duties. she's "defective". but then, we have to look at the underlying reason why she would become a swordsman. a warrior. a skilled combatant. and i believe that, other than something of her own conviction, it was rose quartz. she had strong emotions and strong feelings of protectiveness towards rose, and i believe that that's part of the reason why she feels those feels for steven.

It's funny that you bring this up, I was just about to make a thread on a headcanon I have about Pearl's swordsmanship xD

I also agree with the "Peridot is a more advanced Pearl" headcanon. It makes me want a redemption arc for Peridot and possible Lapis and Jasper too but especially Peridot that way Pearl and her can talk and discuss the changes that were made and the differences and similarities that they have since they were both made for the same thing
